The role of the Host is that of educator and guide of taste: he must be able to express himself through the wines he proposes and cannot be framed by commercial logics that favor mass purchases and approved wines.
Good wine is always the result of the best quality / price ratio.

Good wine respects the balance of the soil and is produced in the most natural way possible.
It is the quality of the raw material, of the environment, of human relationships.
It is an everyday wine, it does not give a headache and makes you want to uncork another bottle.

Good wine stimulates the senses and the connection with oneself and others: life flows, the atmosphere changes, there is a party.
Good wine is to eat and drink well together, to make love, to enjoy life.

Good wine is unique, authentic every time, it is an expression of the winemaker who does not bend to the logic of the market.
Good wine does not follow competitive dynamics to the detriment of the other, but is a collaboration between nature, winemaker and innkeeper, because the interests of one are the interests of the other.
Good wine is independent of regulations, awards and denominations that do not protect those who do things well and favor industry and productivity.

so that the Host can become the master of his choices again;
so that the winemaker can produce a wine that truly represents him;
for nature to keep its balance;
so that people can feel good together again.
